- Cocoa Cake
Preheat the oven to 350F. In a large bowl, whisk together 1-1/2 cups of all-purpose flour, 1/2 cup sugar, 3 tablespoons of baking cocoa, and 1/2 teaspoon of salt.
Use a large spoon to create 3 wells in the ingredients. Pour 1/3 cup of canola oil into the first well, 1 tablespoon of white vinegar into the second well, and 1 teaspoon of vanilla extract into the third.
Slowly pour water over all the ingredients and beat on low speed until everything is thoroughly combined.
Pour the batter into a greased baking dish and bake for 30-35 minutes, until a toothpick inserted in the center comes out clean. Dust with confectioners’ sugar and serve.
- Easy White Cake
Preheat the oven to 350F. In a medium bowl, cream together 1 cup of white sugar and 1/2 cup of butter. Beat in 2 eggs, one at a time, and stir in 2 teaspoons of vanilla extract.
Combine 1-1/2 cups of all-purpose flour and 1-3/4 teaspoons of baking powder and add to the creamed mixture. Stir in 1/2 cup of milk and mix well until the batter is smooth.
Pour the batter into a greased baking pan (or muffin pan) and bake for 30-40 minutes.
- No-Bake Cheesecake
In a large bowl, mix 1-1/4 cups of graham cracker crumbs with 1/4 cup of softened margarine and 1/4 cup of sugar. Press into a pie plate once it’s well incorporated and crumbly.
Beat 8 ounces of cream cheese, 1 cup of powdered sugar, and 1 teaspoon of vanilla extract in a bowl until it’s spreadable. Whisk 1 cup of heavy whipped cream into the mixture until smooth.
Pour the cream cheese mixture into the prepared crust and smooth the top with a spatula. Refrigerate for about 2 to 3 hours, until firm.
- Vanilla Cake With Gold Leaf
Preheat the oven to 350F. Beat 1 cup of white sugar and 1/2 cup of butter together in a medium bowl until creamy. Add in 2 eggs and stir in 1 teaspoon of vanilla extract and 1 teaspoon of almond extract.
In a separate bowl, combine 1-1/2 cups of all-purpose flour, 3 tablespoons of cornstarch, 1-3/4 teaspoons of baking powder, and 1/2 teaspoon of salt. Add to the butter mixture and mix well.
Stir in 3/4 cup of milk until the batter is smooth. Pour into a prepared pan and bake for about 30-40 minutes.
Use tweezers to carefully place a sheet of edible gold leaf (you can get them from various sites such as slofoodgroup.com) around the cake.
